Potato- 500 grams, Ginger- 100 grams
Tomato - 2 medium, Cilantro- half bunch
Garam masala- 1 teaspoon, Chilli powder - 1 teaspoon
Turmeric - 1 teaspoon, Coriander Powder - 1 teaspoon
Cumin Powder - 1 teaspoon, Mustard Seeds - 1 teaspoon
Teja patra - 1 large, Ghee - 1 teaspoon

Masala- Grind ginger, handful of cilantro leaves, and half a tomato to a fine paste.
Wash and boil potatoes. Peel and cut into medium pieces and set aside.
Dice the stem of cilantro leaves into small pieces and set aside.
Heat 1 table spoon oil. Add mustard seeds and let it splutter. Add teja patra and the crushed garam masala.
Then add the diced cilantro stems to the oil and stir well till the stems cook.
Add the ground masala paste and cook for 5 more mins by stirring occasionally. Add diced tomatoes and cook till tomatoes blend well.
Add chilli powder, turmeric powder, coriander and cumin powder and stir well. Add 1/4th cup water and cook the masala well.
Now add the cooked potatoes and mix well with the masala. Cook covered for 5 mins. Add 1 cup warm water and cook for 5 more mins.
Put a spoon full of ghee and garnish with coriander leaves.
Note: You may add green peas to this alu dum.
