Taro Root- 100 grams
Desi Aloo - 100 grams (substitue with potatoes)
Egg plant- 200 grams
Pumpkin - 250 grams
Turmeric- 1 teaspoon
Mustard seeds – 2 table spoon
Fennel seeds – 4 table spoons
Dry red chillis- 6
Badi (Nadi)- 10 -15 pieces
Masala: Soak 3 tablespoon Mustard seeds, 1 tablespoonFennel seeds and 3 dry red chillis in water. Grind to a fine paste.
Cut vegetables into medium size.
Add 1 teaspoon Ghee to a pan and stir in the vegetables. When vegetables are half cooked, add the masala paste, haldi and salt.
Heat ghee in a separate pan, add red chillis, mustard seeds, and fennel seeds. When they splutter, add it to the vegetables and cook for 5 more mins. Put fried badi or Nadi to the vegetables.
